We Don't Just Eat Lettuce by Allyn Raifstanger is not your ordinary vegan cookbook. While it does contain easy to follow recipes to make your switch to a plant-based diet easier, this book is more about the struggles and the benefits of living such a lifestyle. The author shares his own story of how he finally made the decision to cut meat, eggs, and dairy products from his diet. He shares the many health benefits that he was able to receive thanks to this change, and he gives helpful shopping tips including a list of ingredients to steer clear of.

The thing that I liked the best about this book was that the author did a great job of focusing on the benefits of changing your diet. The information that he shared was not overwhelming or overly complicated. It was easy to understand and took away a lot of the stress that people encounter when trying to make such a drastic change to their diet. The author provided recipes, time-saving shopping tips, and even spoke about exercise. He shared his personal journey and spoke about his mindset prior to making the switch. Personally, I have been considering switching to a plant-based diet for a few years now but have always felt overwhelmed with the amount of information out there. Everyone has their own tips, but often it can be hard to find simple information for beginners. This book helped me feel like I truly understood the information and that it wasn't going to be as stressful to switch my diet. I plan on using this book as a reference to take steps towards improving my diet in order to improve my quality of life.

This book didn't have anything that I disliked. I never lost interest, and the recipes were accompanied by pictures which was helpful. All the vegan food that I have previously tried didn't look or taste like the food I'm used to eating. However, it was definitely surprising to see the pictures that accompanied the recipes and notice that they didn't look foreign or unsavory. I was able to find several recipes that looked easy enough for someone like me who has next to no cooking skills. I look forward to trying these recipes and seeing the results of a healthier diet.

I rate this book a 4 out of 4 stars. I saw no reason to rate this book any lower than that. This book was very well-written, and the information was easy to digest (no pun intended). I was able to read it without feeling overwhelmed, and the author's own story was encouraging. This book is suitable for all ages as it does not contain any language or graphic information. If you are someone who has been wanting to change their diet but has felt overwhelmed by all the information out there, I would highly recommend you read this book. It's a great place to start with lots of helpful tips and basic recipes that anyone can cook.
