When I use this in my first review, all of the text after the command is bold or in italics in the preview. How do I 'turn it off' after the text that's supposed to have it?

I have seen people quoting sayings and parts of the book. I would like to know how theur quote 'jumps out' of the formatting as in your examples above. "So it does not read like this."

I am getting ready to enter my review on the streamlined review form. I do not understand the method of bold and italics. I have read the emails here and am still confused. Does it have anything to do with I am typing on an iPad? Please help.
