Your question is a bit broad, so I'll just mention two of my favorites. The Wars of the Roses by Alison Weir, though it covers only the first two conflicts (Lancaster versus York) and doesn't tell of Henry Tudor's rise to power. Peter the Great by Robert K. Massie was more than just a biography of the tsar, but a detailed story of the Great Northern War and Peter's attempts to drag Russia into the modern age. It's a great portrait of early 18th century Europe.

The Things They Carried is a fantastic, poignant story that intertwined war and it's repercussions.

Farewell to Manzanar is a good one about Japanese American internment during WWII

Both show deep sides to war both on and off the battlefield and I think both are non fiction

I love The Republic of Pirates by Colin Woodard! I couldn't put it down. Pirate history is just so fascinating.
