Did you know that food rich in vitamin C is easily destroyed by air and should not be stored for a long time?

Do you know,some foods containd vitamin C like salad for example,we must be very careful on the preparation,as they should be prepared after all and needed a short time before eating them.

Wow, I did not know that. Thanks for the information. I did know that food rich in vitamin C is healthy and necessary but I don't always enjoy the flavour it imparts too the food.

Did you know that fats should not be exposed to light? They react to light causing diarrhea once consumed. Keep your margarine covered.

yeah, I do and I try to prepare them in the best way possible so that I don't end up eating empty fruits and vegetables.

I think most sources of vitamin C comes from fruits so I think it is important to eat them fresh as most fruits are eaten without being cooked.

Heat, light, and air exposure makes oils/fats go rancid. Dark glass bottles help to protect the oil from light. I fear that not only the vitamin C content, but also other vitamins and nutrients, are diminished after fruits and vegetables are peeled and cut exposing them to light and air. I think the texture also is better when fresh instead of prepping in advance. I try to wait until I'm cooking a meal before chopping ingredients.

Actually, the reason for loss of nutrients from our veggies are cause some nutrients are either heat labile or water soluble. This means that any form of heat could diminish the nutrient content and washing also, could cause leaching of water soluble nutrients into the washing water which we throw out. It is advisable to use low heat for veggies, wash before cutting and cover your pot while cooking so that steam with dissolved nutrients in them doesn't escape the pot. This is applicable for all vegetables both green leaf :arrow: y and coloured ( tomatoes, onions, carrot)
