My favorite leftovers are chili and stews because I love how the ingredients absored all the flavor. Also, they can be used as a filling for empanads or pot pies for another day.

The only leftovers I make into something else is normally chicken. I'll make pot pie or some sort of casserole out of it.

A big hit in our house is Beef Fried Rice. I keep a lot of rice on hand anyways, so I always overdo it, and then I use the leftovers as a side dish for some sort of Asian-inspired chicken.
