Lately I've been making fried rice with leftover rice, that's usually what's left over. Meat always gets consumed, no worries there.
Or chuck any leftovers into a soup base and add spices and stuff. That usually works.
Sometimes I'll take a batch and freeze it, saves me cooking in the future.
We'll eat leftovers from a previous meal, just warm it up and maybe add another side for variety. Also add fresh salad on the side with every meal. Neither of us have any probs with that.

If there is so many leftovers I would have to eat it for all three meals for several days and still have some left, I try to freeze it into several smaller portions.

stratas are a wonderfuk way to use up small amounts of foods. breakfast foods including french toast and pancakesfor a breakfast strata, bread,rolls,ect for lunch or dinner items also. just butter a casserol dish line with bread items, layer with chopped up foods of choice each layer using up bread and chopped foods. Make a mix of eggs and cream pour oer casserol and coer. put in fridge till next meal and bake till firm. amazing what you can make doing this.
