Pastas and soups always taste best after a day. The flavors have time to meld. If I have room in the fridge I try to make two lasagne because the one that gets to sit is always so much tastier.

Same here! I like to cook a lot of pasta and add different sauces to it throughout the week:) That's easy cooking!

For instance, I can make chilli into a nice tofu scramble the next day. Or if I'm cooking mince for a pasta sauce, I'll set some meat aside before I add the sauce if it seems like too much. When I make mashed potatoes I also like to make too many because they are so versatile! Rather than thinking about eating the same dish again, it can be fun to think about the flavours that you have already created, and think about other dishes where they could work in.
