Oh, my best baking kitchen trick! Take a pack of muffin mix, they usually call for oil, but instead use just enough water to make a dough that will spoon drop. Put a spoonful on a microwave plate and zap it for 30-45 sec. Viola! Instant cookies! It takes a few tries to get your times right for each different microwave, they'll get crunch round the edges and burn with just a few seconds too much. But once you've got your zapper figured out you can do three to a plate, each bag of muffin mix will turn out about 12 good sized puffy cookie things. So with prep and cooking, a dozen cookies in under 10 mins. I don't grease the plate, use a thin spatula to scoop em off before they cool or they'll stick.

I rarely substitute ingredients but for pastry and cake bakers, good butter and whisked egg white is a must to get a good pastry and cake.

I make my own buttermilk because it’s so easy and is fresh when needed. It’s simply 2tbsp lemon juice to every cup of milk, let sit for 15-20 mins. It curdles a bit and is devine for buttermilk biscuits.
I also make my buttermilk at home. And yes, I use this lemon juice and milk or vinegar and milk. Cream of tartar and milk also does the trick, I've never tried it though.

Eggs can be replaced with a ripe banana. I use this trick all the time when I ma unprepared.

For me, it's all about the substitute of one ingredient or another. If I don't have cream, I'll make a substitute that works. If I can't use sugar, I'll use Stevia as the package directs. Eggs can be subbed with vinegar of all things! So tell me, please, what are your kitchen tricks?
I donnot bake but thanks for the tip you gave. I don't bake because I always mess up what is being baked.

I think for every recipe there is one point that makes it go from normal to great. Most of the time to me it is the right amount of salt and vanilla.
