I love making my African dishes.. my most favorite is the one called Afang soup which is popular in the south south states of Nigeria.
This dish is usually served during major events and functions such as traditional weddings, open house amoung others.
95% of the south south states population love this dish too and it is widely desired by other people.
It is that one dish that you will often get asked of as a south south person.

Afang soup can be cooked with various types of seafood but I love mine with periwinkle, dried catfish, crayfish and stock fish. Waterleaf is used as well to cook the afang soup and it serves as the binder and softer because the afang leave has a little bit tough nature which usually requires the leaves to be pounded in a mortar after being sliced to further soften it.

My favorite foods to cook are dishes with pork and vegetables. I also love to make sushi or any type of cooked fish. I love desserts and goodies but I am not very good at baking so I have to buy those items.

Chicken fettuccini alfredo. I like to cook it out of my crockpot. It is worth the wait and smells so good.

Depends on my mood and what was the ingredients I have in my fridge. But I love to cook what my husband's favorite. His one of his favorite is Chicken Afritada

Ingredients :
1- 1/2 lbs chicken, cut into serving size or chicken chunks
1 large potato, chunks
1 large carrot, chunks
1 medium red bell pepper, chunks
1 medium onion, chunks
1/4 cup green peas (or frozen peas)
4 cloves garlic, minced
1/2 can 8 oz tomato sauce
1 1/4 cup water
1 tbsp fish sauce
salt to taste
3 tbsp cooking oil

HOW TO COOK :
- Heat cooking oil in a pan or wok.
- Saute potatoes, carrots & bell pepper then set aside.
- Using the same pan, saute garlic & onion.
- Add the chicken (I usually used chicken chunks). Simmer for 10-15 minutes or until tender. (occasional stirring).
- Add fish sauce & cook for 3 mins.
- Add water when it starts to dry up. Bring to boil.
- Add tomato sauce. Let it simmer.
- Combine all the vegetables & simmer for another 5 minutes.
- Remove from heat & transfer to serving bowl.
- Best serve with hot steamed white rice

psspcj wrote: 24 Feb 2018, 12:14 Being Indian mother, I try to cook everything my kid wishes to avoid him eating outside and junk food. However, my personal favorite food to cook is dal-rice. Just put it in pressure cooker and leave it on it's own. Even though, it may be my lazy mood but still this gives good food. Just pour butter/ghee on hot dal-rice and you are good to go for homemade, simple, healthy, delicious food.
You sound like a good mother. I love dal and rice too (I'm not vegetarian).

I love sweet and sour too, one of the best kind of dish for me. But my favorite food to cook is kare-kare. It's a filipino dish.
