They're very different topics! However, the Delia Smith How To Cook books are really good if you want to learn from scratch. She might seem quite old-fashioned but her techniques are sound.

I find baking very relaxing and fun. I will recommend Joy of Baking. They have easy go-to recipes for everyone!
