Being the African that I am, I have to cook for the family. So I made pancakes for breakfast and topped up with dry fried peanuts. This keeps everyone energised till the next meal.

Today I cooked homemade scallop potatoes. This is a recipe that I thought of and it turned out delicious!

*Use a long dish.

Ingredients
Potatoes cut into dollar shape
2 cans of cream of mushroom soup
Bell peppers chopped into small pieces (I used orange, green, yellow, and red)
Grated cheese (I used marble and cheddar)
1 can of mushrooms
1 onion finely chopped

Directions
1. Cut five or six medium potatoes (Maybe more depending on the dish size)
2. Spread some cream of mushroom soup on the bottom of the dish
3. Begin to layer. Place a single layer of sliced potatoes. Followed by a layer of cream of mushroom soup, mushrooms, onions, and the different bell peppers. Grate a little cheese on the layer.
4. Repeat step three and continue until you have the dish almost full. Cover the top with cheese.
5.Cover in aluminum foil
6. Bake for two hours on 400 degrees F

I made masala dosa today. Its a traditional South Indian recepie. It has tonnes of varieties and tastes wonderful anytime of the day.

I made an attempt of a healthy cheesecake, made without sugar, with some fat free yoghurt and soft cheese. Sweetened it with a spoon of honey and some vanilla essence. It did not turn out well, tasted like a frozen sour cream so I ended up mixing it with some salted caramel ice-cream! 🤣
