This evening I cooked a very good baked Tilapia in olive oil and butter...seared first and then slowly cooked in the juices. To go with that I made some brown rice with mushrooms and scallions. Turned out healthy and great!

Ah...today was BBQ day since the weather hit 99 degrees! I made BBQ pork ribs in a spicy sauce. They turned out very juicy and tender...finger-lickin-good! With it I had a wonderful creamy macaroni salad and threw some buttered corn on the cob on the grill for good measure. All-in-all it was a wonderful Saturday meal!

Not sure what I'm making for dinner, but so far, I've just made "sun tea" and an open face toasted cheese with turkey today.
