I cook and bake a lot. I find it fun and relaxing and I like being creative. My meal today was Cast Iron Cornbread with Ham and Beans. I found that I can do the ham and beans in the pressure cooker and the flavors really get thru without simmering for hours.

Lets see... well tonight I am not that hungry but have a hankerin for something Mexican...so... it will be some jalepeno refried beans with chopped olives and some Mexicali cheese oh.. and of course some scallions to top. Then some home made flour tortilla chips for dipping. Yum.... oops...did I forget the Margarita?..again? lol

This is more of a food prep than a cook or bake. I made a green smoothie with a handful of nettles, a mango, two bananas and 1 tbs of Sunwarrior Ormus Greens. I added a little water to start it off and blended in a high powered blender until smooth. It's a great meal replacement. It's very filling and very quick to do. nb. you can use spinach instead of nettles or any other greens. If using nettles pick the leaves and tops from plants that are around 30cm in height and not in flower. images/icons/smile/mrgreen.gif

I had a bunch of weird fish-flavored crackers from the Asian grocery. I ran them through a food processor and used the powder to make chicken nuggets and tempura vegetables.

Today i am going to cook eggs and potatoes with green salad.. Its really a difficult task to decide about cooking everyday. Because everyone has a different choice.

I am getting over the flu and haven't eaten in the past couple of days so I decided on a cup of tomato soup and a dutch crunch grilled cheese sandwich - comfort food. :roll:
