I’m making a salad with chicken. I try to eat properly. I lost a little weight during quarantine in spring. I think it's because I had more time and I was more attentive to my nutrition. But at the end of the summer I returned to my usual way of life, so I gained 4 kg. But now it's lockdown, and I plan to monitor my diet again. I liked my body in the summer, I want it back. But it’s difficult when your family continuing eating cakes, burgers, pasta and you just look at that and think “I want it too”.

I am still deciding wether I bake a banana with chocolate chips cake, a vanilla cake or a vanilla with chocolate chips cake. Tomorrow it is father's Day here in Ecuador and I want to celebrate my single mom for all the effort.

Today I cooked noodles and eggs. I know it's a weird combination but I just wanted to know how it'll taste and I really liked the outcome.

Well being on a new diet means trying new recipes. So today I tried a banana bread recipe. It turned out well but next time I think I will use less sugar and bake it longer. But other then that it was really good.

Cheese curds! I don't like to use my fryer very often because it makes the place stink, so I usually make big batches of things and freeze them. In the past I made coconut chicken and they turned out, so I'm going to do more coconut chicken and coconut shrimp. For the cheese curds I used inexpensive regular rectangular blocks of mozzarella, cheddar, provolone, and gouda, cut into cubes and breaded twice before frying. They all turned out good so I'll be making more and freezing them.

White rice and Vegetable stew. I used spinach as the vegetable and some dried fish, which is actually Catfish.

Today I cooked homemade lasagna. It's one of my favorite dishes. I recently learned how to cook so I don't know how to make a lot of dishes, but at least I'm trying.

Chicken alfredo fettuccine! Usually, my family likes it with cut-up smoked sausages seared with some butter. This time I topped it with leftover oven-grilled chicken and it came out just as great. I made a large jar of alfredo, so I'm all set for the week. :cooking:
