Chili spaghetti with shredded cheddar and fresh chopped onions. Definitely one of the things I miss from growing up in the Midwest.

I made low-carb pizza crust today! It's always yummy. Mozzarella cheese, almond flour, baking powder and spices. I just make the crust, not an actual pizza. I just use it like a bread substitute.

Hmm.. what did I cook today?
Does mixing this together in a baggie count?

Reduced Salt Nut Mix - by a nut
Since I seem to be somehow related to a camel - I can retain water for an incredibly long time, I need to reduce my non-iodized salt intake.
Salted Tinned nuts are often onsale, so I make my own reduced salt nut and seed mix.
Ingredients
1 tin salted mixed nuts
1 bag unsalted shelled sunflower seeds
Method
  • Open tin of salted mixed nuts
  • Pour unsalted shelled sunflowers seeds into salted tinned nuts
  • Replace lid on tin of salted nuts,
  • Shake well
  • Repeat the last 3 steps until it is impossible to pour any more sunflower seeds in the nut tin,
Enjoy!

It's amazing how many shelled unsalted sunflower seeds will fit into a can of salted mixed nuts!

Salmon with my own sauce mixture of chipotle sauce, maple syrup and mustered. It creates a sweet yet spicy sauce that leaves a wonderful tangy after taste. I paired my salmon with garlic mashed potatoes and broccoli.
