My husband is from Louisiana and we lived there together during hurricane Katrina. I often cook his family Cajun recipes for him and today he requested shrimp and sausage gumbo so that was my goal. I'd be happy to share the recipe, turned out fantastic! Boiling the shrimp peels makes a fantastically flavorful stock.

I cooked matooke (banana) a local food from Uganda.
prepared (peeled) the banana fingers,
washed them in a dish of water,
wrapped then in the banana leaves,
and steamed them.
after an hour i smashed them in the banana leaves,
wrapped them again and put on heat.
after 30 minutes i served when hot.

I am mostly an indifferent cook. I don't like day-to-day cooking. But I do enjoy cooking for special occasions. Recently for the tri-birthdays I have the first week of January, I made cheesecakes. One was a keto-diet friendly avocado-lime-coconut cheesecake and the other was a less diet friendly chocolate caramel cheesecake. Both were (and are) quite delicious. <3

Alas, the cheesecake is gone. So, my next abracadabra in the kitchen to meet my sweet tooth/have a fat bomb for my keto diet is Bailey's Chocolate Mousse. 1.5 C heavy cream, .4 C sugar (or substitute), .5 C Bailey's Irish Cream, dash of vanilla - use electric mixers on high for 10 minutes or thereabouts until ripples maintain themselves indefinitely. Spoon in small cups. Refrigerate to set. Enjoy!
