I cooked my homemade lasagna two days ago, I love making it as well as eating it for the two days afterwards. Tonight I will be making Simple Teriyaki Steak dinner. This is a new recipe I found, so I will let you know how it turned out.

Today I wasn't too hungry so I just made up some horsdeuvres. Sesami seed crackers with a red pepper hummus spread with serachi pickled anchovies. It was quite good. :tiphat:

Tonight for dinner my boyfriend and I made buffalo chicken sliders. The chicken was pounded out thinly and coated in breadcrumbs and parmesan cheese, then pan fried. Once those were done they were placed on toasted buns. Then we put the sauce on, which was made with onions, garlic, tomatoes, butter, and Frank's Red Hot. Then we added mozzarella cheese one top and put them in the oven to melt the cheese. They were really really good. The only thing that we changed from the recipe is that it called for sugar to be added to the sauce but we wanted it to be spicier so we left it out. I had herb roasted asparagus with my sandwich too.

I'm a bit of a wild plants/foraging freak so I've cooked a nettle, tofu and noodle soup. I love nettles. They have got to be the best (free) food on the planet. Did I mention free?!! Use scissors and gloves to cut them up to 30 cm in height. The younger/lighter ones are better. Strip off the leaves and ditch the stringy stems. Cook like spinach. Eat like spinach. They are better than spinach because they are not slimy. You can freeze or dry them for use in the winter when they are not available. Chock full of nutrients. If you keep cutting them down, they keep coming back up. I've even watered mine this year because of the dry weather. I've even got some in my polytunnel.

I just posted about foraging for nettles. I thought I'd just add that if you want some mild tasting greens for salads, look out for chickweed (Stellaria media). You can buy the seeds if you don't have any in your yard. They are full of goodness. Much better than those watery F1 hybrid lettuce you buy in the stores.
