I made butterless biscuits and gravy. The biscuits were so easy using flour, baking powder, sugar, salt, olive oil, and milk. Gravy used chicken drippings, cornstarch, and a mixture of milk/ broth/ water.

I am slow cooking chicken, with red onion, green hatch chilis and mushrooms for chicken tacos. I seasoned with cumin, oregano, garlic powder, roasted chipotle powder, salt and pepper. After cooking through the morning and afternoon I will mush it with a wooden spoon till it is shredded and serve it on flour and corn tortillas topped with sharp cheddar cheese.

Since it is raining out I am going to make some homemade chicken soup. It takes all day to make because I boil a whole chicken until it falls off the bone. I then de-bone it and skim the fat. I then add my secret spices and some carrots and onions. After about 4 hours I add some cooked egg noodles and enjoy it with some french bread. Yummy ... comfort food.
