I just made homemade tortillas for the second time a few nights ago, curious...what are your favorite Mexican or Spanish dishes? Or your favorite recipes/tips and tricks? :)

I love homemade chicken tamales cooked in my instant pot. They are fairly easy and taste delicious! You basically just need corn husks, masa harina (which is ground corn and comes in a packaging similar to flour), shortening, chicken, and green chile sauce. You can easily look up tamale recipes online and find the one you like that has the ingredients you are comfortable cooking with.

The bold and spicy flavors of Mexican cuisine are particularly appealing to me. I enjoy savoring dishes like chicken mole and shrimp tacos. The vibrancy and variety in Spanish tapas are also a culinary adventure I relish.
