Usually I don't like having ice cream but whenever I have, I try to go for a chocolate ice cream.
Chocolate flavour is amazing.

Ice cream is one of my favorite desserts, but I thought I'd share this homemade recipe with you guys. It's easy (though you might not have ingredients on hand, they're easy to find) and you don't even need an ice cream machine! It's healthy, too, though not the lowest fat option out there...but dark chocolate is good for you, right?

You'll need:

3 medium sweet potatoes, baked and the insides scooped out
1 bag dark chocolate chips (you can use regular semi sweet, but dark is even better!)
1 can "lite" coconut milk

That's it!

**Optional: a small pinch of salt and a tb. vanilla extract. I prefer using, but you can skip it and just use the above 3 ingredients.

Melt the chocolate, either in the microwave for 20 seconds at a time, stirring each time till fully melted, or on the stove in a double boiler.

In a blender or food processor, put all ingredients in and blend till smooth and mixed. Pour into a tupperware and freeze 2 hours. It's best to stir every half hour, but not totally required. It just makes a better, smoother texture.

ENJOY! You cannot taste the sweet potato at all! Even my kids were completely fooled. It is just very rich, chocolate deliciousness. It's best to eat it all at once :D because it hardens up a lot as it sits in the freezer. But you can keep it longer, just be aware you'll have to let it sit out on the counter for 20 minutes or so before scooping.

I don't like ice-cream but maybe its because I haven't found one that I like. I am going to try the various suggestions here and I might just find 'the one'.
