So, my next abracadabra in the kitchen to meet my sweet tooth/have a fat bomb for my keto diet is Bailey's Chocolate Mousse. 1.5 C heavy cream, .4 C sugar (or substitute), .5 C Bailey's Irish Cream, dash of vanilla - use electric mixers on high for 10 minutes or thereabouts until ripples maintain themselves indefinitely. Spoon in small cups. Refrigerate to set. Enjoy!
That sounds delicious! I will have to try it. I just made grilled cheese today.

I liked the Bailey's Chocolate Mousse so much, I decided to use it on this concoction for my Mom's birthday (she is a chocoholic). Brownie batter on the bottom of a springform pan, topped with real cheesecake mixture (the kind that needs eggs and must be baked). After it cools, then add the bailey's chocolate mousse on top.

Today I'm doing egg whites with ham for breakfast, soup and salad for lunch, and I'm not certain what I'm making for dinner yet. Probably some form of chicken. Ideas?

I used to make rice cake before I was diagnosed with hyperthyroidism. I wish I could still do it from time to time.

I have not baked or cooked today. I had both my hands operated on for carpal tunnel and just got my stitches out Monday. I am so ready to bake some homemade bread as soon as the hands regain enough strength.

I'm very excited to be making one of my favorite recipes tonight--chicken chile verde lasanga! It sounds like an odd combination but it's delicious!
