I'm probably going to make sandwiches today. My mother in law just made some fried cauliflower bites- better than popcorn IMO!

I love baking a lot because to me baking is an art. You have to think when baking. I baked cake today. It was really nice. Everything was perfect from the taste to decoration.

I was so bored that I baked a lot today. First I baked a decadent chocolate cake, the recipe of which I got from my favorite chef in YouTube. The cake was super moist and the dark chocolate ganache topping is made with dark Belgian chocolate, making it more yummy and divine!

Then I made a no-knead soft butter bread, the recipe of which I also got from watching YouTube. :D I liked this recipe since as the name says, it doesn't need kneading so less effort! Although the dough required some time to develop the gluten with occasional stretching and folding. All of these effort was worth it once you smell the freshly baked bread out of the oven.

Tomorrow, I'm planning to cook a Malay-Bruneian traditional food, which is called Nasi Katok. It's fried chicken served with sambal and rice. It has a distinct taste than the typical fried chicken from your favorite restaurant or fast food chain.

Oh, I love cooking and baking! :P

I prepared a chickpea salad. We usually use it in curries and stews. So, it was unusual for me to use it in a salad along with veggies and greens.

I've been healing from having sepsis in October, so my appetite has been ranging from starving to not having an appetite for days. I adhere to a very specific diet so that I can feel great and continue healing, regardless of how much food I am actually able to eat. With that being said, I always make a huge batch of chicken broth with tons of chicken necks, backs, feet and drumsticks as a huge source protein more nutrients and collagen to add to my body at this point. I use this stock to cook everything I eat - potato soup, beiler's broth, chicken and veggie noodle soup, and noodles. I've been finding it's the best way to heal, feel better and an easy way to eat healthy.
