I love kombucha! If you add some chia seeds and honey, it gives it an excellent flavor and a unique consistency. I generally use about a tablespoon of chia seeds to a regular mason jar of tea. I highly recommend it. Do you make your own kombucha?

Yes I do but haven't tried so many flavours. I have never made it, I just help with the flavoring. My friend starts his own mother and brings it over after each batch is done fermenting. That's the point we start playing with flavors. We only do the second stage with the flavoring for a few days. Then we add the seeds and refrigerate them for 24 hours. I've found that the seeds will just keep absorbing liquid if you let them. So starting them with the flavors just creates a gel. Flax might still be tasty and give that seedy texture, but I'm not sure it would affect the texture the same way. Chia seeds release a gelatinous substance known as mucilage when soaked. If you don't stir them in, they form a dense gelatin layer at the bottom of the tea. It's really interesting. It reminds me of tiny boba balls. There are several plants that release this substance for propagation purposes.
