Getting ready to dive into my 1st attempt at baking a " Pineapple-upside down cake " from yesterday's pineapple chunks...

I'll use a natural sugar substitute of course, and will end up w/a healthy dessert considering the vitamins / minerals contained in Pineapple ( Vitamin C, Potassium, Iron, B6, etc. )

Just finished up my dinner: Japanese meal called nabe (said like nah-beh). It's basically just boiled vegetables, none of which I know the name of in English. A couple different kinds of mushrooms, some green leafy stuff and this weird long root thingy (I think that one is a burdock). I added some chicken to it and served it over rice with dried, oil-flavored (Korean style) seaweed. Yummy.

Wow! my kind of food!, discovered seaweed recently, I add it to salads..
I eat mushrooms often, for " taste " and tremendous health benefits...

I have them growing like crazy on my front lawn, but I'm AFRAID to take the risk of eating them...
I need to call the college here ( botany dept ?. ) to see if it's safe...

I'm tasting my soup that I'm making from scratch for lunch, it's Portuguese ) " Caldo Verde " Kale, Beans, onion, carrot, sausage, etc...

A hearty soup for a chilly day here ( 39f )
I'll be having German Black bread w/it, along with Stilton cheese, salad, and stuffed baked apples w/cinnamon, walnuts, raisins, topped w/whipped cream...

In a restaurant that has a bread bar. There is this thing called a muffin, but it's not really a muffin. It tastes just like the corn bread my mom used to make. In heaven right now...
