I have only had Yorkshire pudding once and that was with Roast beef while I was visiting a friend in England. That was over 20 years ago and I can still taste it. So delicious. I am now inspired to try and make it myself Carla.

I make a large pan 'Yorkshire' quite regularly at home.

115g/4 oz Plain Flour
3 Eggs
275 ml / 9 fl oz milk
Pinch of Salt
All whisked together with no lumps, leave standing for as long as possible before cooking whilst whisking every now and then. Heat oven to 220 C / 425 F, or gas mark 7
Place a little oil on pan to prevent sticking and place in oven until up to temperature (this is important).
Remove pan ( roughly 12" X 6" by 1" deep baking tray) and pour mix slowly into tray. maintain oven temperature as much as possible by closing doors whilst messing about. When tray is placed inside oven, leaving enough room above for it to rise (I didn't once and it got stuck all over the grids). It should take about 20 - 30 minutes with doors not opened until cooked. It falls flat and becomes rather stodgy if doors are opened. We often have this with sausages (Toad in the Hole).... enjoy.

Coincidently, I also make this and we have it for a dessert with jam or fruit on it... cold or hot. !

Just wanted to pop in with a report! Picked up a tin of roast beef and made the Yorkshire Pudding to accompany it (...and it worked!) puffed up nice...then center collapsed...hollow inside...crispy outside and the bottom was more of a dumpling. Drizzled the beef gravy over both it and the roast :D With a salad and baked custard for afters made an amazing meal! Will definitely do it again.

Did you open the oven door when it was nearly cooked, this is a normal thing to flatten a Yorkie...... similar to a souffle I would imagine....

You can get roast beef in a tin?????

Yes...it is small (about 12 oz) pre-cooked/gravy. Aldis 2.99 USD. Really tasty.

Just finished The Duchess of Bloomsbury Street! Loved the meltdown where HH had been dragged everywhere except what she wanted to see...and she finally spoke her mind (...was wondering how long it was going to take...) just reading about all the engagements she made during her trip there was exhaustive!

Such an inspiration...so Dato...what do you suggest as a nice follow up of hers?

Carla, sorry it has taken me so long to respond. I would whole-heartedly recommend Q's Legacy as the perfect follow up to Duchess. I gave a bit of a synopsis on it to Fran somewhere back in this thread. I don't think you will be disappointed with it if you liked 84 and Duchess.

Loved Duchess...perfect "and then what happened"...will have to see if I.L.L can procure a copy of Q's legacy. Left to my own devises I asked them to find Secret Love...have you read it? Have I made a horrible sequencing mistake? Please advise @@

I am not familiar with Secret Love but I don't think you will be making a mistake. Q's Legacy is the natural sequel to The Duchess Of Bloomsburry Street.

I am so glad that you enjoyed these books. I recently gave my copy of 84 & Duchess to a friend who was traveling to Washington and I just got a response from her telling me that she loved both of them. It is nice to be able to share a book one loves with others and get such positive feedback.

Regarding Secret Love - does it have anything to do with a man Helene knew who was in the military? There are allusions to him from time to time in things I've read about her but so far he has remained a "mystery man" to Helene Hanff's fans. I read somewhere that she may have been involved in a secret affair with some famous person but have found nothing to back it up.
